HAPPY ST. PATRICK’S DAY!!!
I’m coming to you from Chicago still, a city that knows how to celebrate St. Patrick’s Day if anyone does in America.
One of the things I was very excited about for this trip was to be able to see the Chicago River dyed green for St. Patrick’s Day. And so Wednesday, on our way to see the Bean and Drunk Shakespeare, we stopped by the Riverwalk and did a photo shoot with the VERY green Chicago River!
We opted to go on Wednesday instead of waiting for St. Patrick’s Day because they dyed the river last Saturday and we weren’t positive the dye would last until Friday. I’ve been wanting to see this ever since I saw the green river in the movie The Fugitive in the 1990s. So one more thing off my bucket list! 🙂
We are actually being kind of chill today. I just put the corned beef on the stove (it takes 2 1/2 hours to boil on top of the stove–a recipe given to me by an Irish lady I stayed with one summer while working on my dissertation in Dublin) and in about two hours I’ll start the cabbage and potatoes. We’ll have a grand lunch, then watch one of my favorite Irish themed movies–The Quiet Man (with John Wayne and Maureen O’Hara). I love to watch that every St. Patrick’s Day.

Yeah, I got home late last night from Chicago and was late putting up my post. 🙂 The river was awesome!

Sounds like the perfect St. Paddy’s Day . . . unless you’re in Ireland. I’ve seen the green Chicago River when spending the holiday in Chi-town with my former roommate. So cool! And I loved the bands and parade! No corned beef and cabbage this year but I did get my family to eat it when I made it a year ago. Even I had my doubts about it but it was GREAT!

The cabbage charred just a bit, but that’s a desired thing now, I think. The corned beef was excellent! Thank you! And my husband couldn’t find anyone near us in Virginia selling corned beef and cabbage yesterday, so tomorrow we’re having it for Sunday dinner! I must confess, I won’t mind cooking and eating it again. 🙂
